Cinnamon-Oat Waffles

These waffles are a family favorite and a must on weekends where we like to have a nice, big filling breakfast all together. Cinnamon is a flavor all of us love and when combined with a warm, fluffy waffle nothing could be better. My dad even loves them and he’s a fan of the pre-made box mix and against all things healthy. If he can be fooled into thinking these are a guilty treat so will you! I love them by themselves with a nice drizzle of honey, but they’re also delicious when filled with chocolate chips or blueberries and can be topped with an array of fruits and nuts. Serving:

  • 8 large waffles

Ingredients:

  • 1 cup of whole wheat or oat flour
  • 1 cup of rolled oats
  • 1 ½ cups of unsweetened almond milk
  • 2 large eggs
  • ½ cup agave nectar or honey
  • 2 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ½ tsp salt

Instructions:

  • In a large bowl combine flour, rolled oats, cinnamon, baking powder, and salt. In a separate medium sized bowl combine almond milk, eggs, agave nectar, and vanilla extract.
  • Make a well in the large bowl with the dry ingredients and slowly pour in the wet ingredients and whisk until just combined. Don’t over mix or the waffles will be tough, if the batter has a few lumps it’s okay.
  • Now is the time to heat the waffle iron and spray it liberally with nonstick cooking spray. Once the waffle iron is ready, ladle about 1/4-1/2 cup of batter into the waffle iron depending on how big of a waffle you want. You can also add any mix-ins at this time such as blueberries or chocolate chips so everyone can customize their waffle. These are delicious plain, but are also easy to create various flavor combinations. Cook waffle based upon your waffle iron and enjoy with a hungry crowd!
