These chocolate zucchini waffles are super light, moist, and airy while packing in a strong cocoa flavor. It’s another guilt free chocolately fix that’s perfect for any day of the week at any time of day. This is a perfectly nutritious breakfast as well as a sweet treat for dessert and definitely something that won’t leave you feeling bloated or guilty for eating. I love topping mine with fresh sliced strawberries and a drizzle of peanut butter. It’s like a party in my mouth and tastes like heaven. Peanut butter and chocolate are the perfect duo as is and the strawberries add a fresh bite that’s just unbelievable. The zucchini practically disintegrates and makes sure the waffle doesn’t dry out while boosting nutrition. These waffles are amazing and I can assure you this will be the next hit at Sunday brunch and your new go-to chocolate fix.

  • 3 large waffles


  • Half a medium zucchini, shredded
  • ¼ cup cocoa powder
  • ½ cup whole wheat flour
  • ½ cup rolled oats
  • ½ cup unsweetened almond milk
  • 1 large egg
  • 3 tbsp agave nectar
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 ounce chopped chocolate, optional


  • In a medium sized bowl combine flour, oats, cinnamon, baking powder, and salt. In a smaller separate bowl whisk together almond milk, egg, agave nectar, and vanilla extract.
  • Add the wet ingredients into the dry and whisk until just combined. Fold in zucchini then chocolate chunks or chips if desired.
  • Heat up and spray waffle iron and pour in about half a cup of batter for a full, large sized waffle. Cook until slightly crispy on the outside and top with fresh fruit, maple syrup, or whatever you desire and enjoy!
